Herbed Chicken Cutlets with Beet Risotto and Roasted Brussels Sprouts

Tonight, I prepared herbed chicken cutlets.  I cut a chicken breast width-wise at the long side but did not cut all the way through, and then inserted chopped rosemary and goat cheese inside of the chicken breast.  I mixed chopped parsley in bread crumbs.  When I cut the cutlet into a half, nice herbal aroma came out from the chicken!  I put roasted small Brussels sprouts on the beet risotto. 
I also prepared this salad.  This was very simple but so delicious!  Tomato, avocado, persimmon, cucumber and dried fig were included.  The taste was something I would like to repeat many times!
