January YOSHIKOlicious Beauty Kitchen Part 2 1月の YOSHIKOlicious Beauty Kitchenパート2

Hello, everyone!  A couple of days ago, I had my social dining, YOSHIKOlicious Beauty Kitchen.  Thank you very much for those who participated!  Every month, I organize this social dining to share my beauty foods with friends, acquaintances and their friends in fun and relaxed atmosphere.  Through this social dining, I hope people realize foods which would be good for health and beauty and also extend their network. 
皆さま、こんにちは!数日前、私のお食事会、YOSHIKOlicious Beauty Kitchenを開催しました。参加してくださった皆さま、ありがとうございました!毎月、友人、知人、そのお友達たちと楽しくリラックスした雰囲気の中で私の美容食を一緒に食べていただくお食事会を開催しています。このお食事会を通じて、皆さまが美容と健康にいい食事を実感し、またネットワークを広げていただけることを希望しています。

The theme for January is fish!  I did this once earlier this month, and this theme is very popular, so I did one more time.  The menu is almost the same, and please refer to my previous post regarding the nutritious benefits we can get from the eat dish.
今月のテーマは魚です!今月初めにもやったのですが、このテーマ、とても人気があり、再度開催いたしました。メニューはほぼ同じですので、それぞれの料理から得られる栄養的なメリットは前回のポストを参考にしてくださいませ。

The dinner was started with unrolled datemaki ( traditional Japanese egg dish for New Year) which was very popular.  They were delicious this time as well!  This datemaki contains hampen which is made of white fish.
まずは、前回も大好評だった、巻かない伊達巻き。今回も美味しくできました!伊達巻きにははんぺんが入っています。
These are fried and marinated smelt fish (called namban-duke).  We can eat these fishes including the bones and that is good for health.  The taste is little bit sour and spicy as Japanese vinegar, red chili pepper, and ginger are used for the seasoning.
こちらはワカサギの南蛮漬けです。骨ごと食べられるので、健康にいいのです。お酢と鷹の爪、生姜を味付けに入れているので、少し酸味と辛味があります。
These are pickled herring and vegetables with salt and rice molt (nishin-duke---local food from Hokkaido).  I was born in Tokyo, but my father's mother was from Hokkaido, and she made nishin-duke in winter when I was child.  By using rice malt, this has become fermented food.  Vegetables are daikon, Chinese cabbage, and carrot.
2品目は、ニシン漬けです。私は東京生まれですが、父方の祖母が北海道出身で、小さいころ、冬になるとニシン漬けをつくってくれました。米麹を使うことで、発酵食品になります。野菜は大根、白菜、ニンジンです。
Monkfish is one of the seasonal fishes for winter.  I deep fried monkfish (karaage), and placed them on the celery root puree.  I then sprinkled matcha salt on the top.  I added onion, apple, heavy cream, and Parmesan cheese to the celery root.  The fried monkfish and this celery root puree was a very good combination!  Celery roots are rich in vitamin C as well as vitamin B-6 which helps to digest protein.  This time, I also added ginkgo nuts.  Ginkgo nuts contain good amount of vitamin B-1 and potassium.
アンコウは冬の魚。唐揚げにして、セロリルーツピューレの上にのせました。そして、上に抹茶塩をかけました。セロリルーツには玉ねぎ、りんご、生クリーム、パルメザンチーズが入っています。アンコウの唐揚げとこのセロリルーツのピューレ、とってもいい組み合わせでした!セロリルーツはビタミンCと、たんぱく質の代謝を手助けしてくれるビタミンB-6が豊富です。今回、銀杏も加えました。銀杏は、ビタミンB-1とカリウムを結構含んでいます。
These are home-made oil sardines with tomato flavor.  We can eat the whole sardines including the bones.  I added fresh tomatoes, black olives, and chopped parsley when I placed the sardines on the dish so that this oil sardine looks very fashionable.
こちらは、トマト味の自家製オイルサーディンです。骨も含めて丸ごと食べられます。お皿に盛り付ける時に、生のトマト、黒オリーブ、刻んだパセリを加えて、オイルサーディンをお洒落なご馳走に見えるようにしました。
This potato salad contains anchovy.  I think warm potato salad is the best, so I always serve warm potato salad.
このポテトサラダにはアンチョビが入っています。私は、ポテトサラダは温かいのがベストと思っていますので、いつも温かいポテトサラダをお出ししています。
These are fried and grilled Spanish mackerel with curry flavor.  This is easy and delicious, and also tasty even hours later.  Spanish mackerel is inexpensive fish, yet it looks festive by adding micro green and colorful tomatoes.
これは、カレー風味のサバの揚げ焼きです。簡単で美味しくて、時間がたっても美味しくいただけます。サバは手ごろな値段の魚ですが、マイクログリーンとカラフルなトマトを加えることで華やかになります。
The last one was saury fish rice!  I added generous amount of ginger.  This saury fish rice was very popular!
締めはサンマご飯!生姜をたっぷり入れています。このサンマご飯、とても好評でした!
One of the participants made and brought Gateau Invisible ( French style apple cake), and we had that for dessert.  This was not too sweet and very delicious! Thank you so much!
参加者のお1人が、ガトーインビジブル(フランスのアップルケーキ)をつくってもってきてくださったので、デザートとしていただきました。あまり甘すぎず、とっても美味しかったです!ご馳走様でした!
I served hoji tea with the cake.  Hoji tea makes us relaxed.
ケーキと一緒にほうじ茶をお出ししました。ほうじ茶飲んで皆さんリラックス。
Thank you very much again for those who came in the bitter cold night!  We had very good, memorable night.
極寒の晩にいらしてくださった皆様、改めてありがとうございました。とても楽しい思い出深い晩となりました。
