Roasted and Chilled Bell Pepper Salad ローストしたピーマンの冷製サラダ

Hello, everyone.  For those of you who live in the U.S.A., I hope you have had a nice Labor Day Weekend.  New York Fashion Week is approaching, and I am getting busy!  Before the Fashion Week starts, I need to clean up my refrigerator as much as I can.  I had various colors of bell peppers and I roasted all of them to make this salad.  The dressing contains chopped olive and garlic and some other ingredients.  I put them together with some parsley on the place, and then chilled the salad in refrigerator for two to three hours.  This turned to be pretty good!  Colorful bell peppers are rich in vitamin C and E as well as B-6 which helps digestive system.  Parsley is high in vitamin C, A, iron, and potassium.
