Pumpkin Gnocchi カボチャのニョッキ

Hello, everyone.  In green markets, there are various kinds of pumpkins available!  I bought one yesterday, and I made pumpkin gnocchi for lunch today.  When we make gnocchi with pumpkin, the dough stay together without egg, but it is too soft to make shapes.  Therefore, I cut the dough with spoon and then boiled them.  Regarding the sauce, I put rosemary, sage, black olive, grated parmesan cheese, and toasted breadcrumbs.  Adding chopped black olives was a really good idea!  This was so delicious!  Pumpkin is very rich in beta-carotene and vitamin E which are powerful antioxidants.  Pumpkin is also a very good source for vitamin A, C, as well as B-6!  Vitamin A helps to keep skin and mucous membranes healthy.  Vitamin C is necessary to produce collagen.  Vitamin B-6 assists metabolic regulation!  The color turned out to be very pretty, and I like that, too!
