Appetizer with Roasted Vegetable and Fresh Green Leaves ローストした野菜と生の葉野菜のアペタイザー

Hello everyone.  We had snow yesterday, and it was like this this morning!  It's March 21st!
And little before noon, the blue sky finally came out!  The soft blue color was really beautiful!
Today, I made appetizer with roasted eggplant and red bell pepper as well as fresh green leaves.  I also put cashew paste and my own dressing.  This was really delicious!  I think this would be good especially for summer!  I have done similar dishes with roasted vegetables and cheese, but this combination of roasted and fresh vegetables was good, too!  This is also good for people who want nondairy foods.
