October YOSHIKOlicious Beauty Kitchen 10月のYOSHIKOlicious Beauty Kitchen

Hello, everyone.  Every month, I have been doing YOSHIKOlicious Beauty Kitchen which is a social dining of eating my beauty foods together.  I received a request of preparing beauty foods which would work with Japanese sake, and I held the social dining under the theme this month.  All the participants brought one bottle of sake each, and the line of sake looked great!  All the bottles got empty, and It turned out to be very fun night for sake lovers!
皆さま、こんにちは。私は毎月、私がつくった美容食を一緒に召し上がっていただくお食事会、YOSHIKOlicious Beauty Kitchenを開催しています。日本酒にあう美容食を用意してほしいとのリクエストをいただき、今月はそのテーマで開催しました。参加してくださった皆様は、それぞれ1本ずつ日本酒をお持ちくださり、並べた光景は圧巻!全部飲んで、日本酒好きの方々にとって大変楽しい夜となりました!
My friend, Chiya san who is a sake sommelier selected which sake to open first and she gave a tip about coordination of sake and food.  For example, one of the participants brought wasabi cheese made by Amish, and the cheese was very tasty, but Chiya san suggested us to wait to eat the cheese until we finish drinking the certain kind of sake.
酒ソムリエの資格をもつお友達のちやさんが、どのお酒を先に開けるか選んでくださり、お酒と食事の組み合わせについてちょっとしたアドバイスをしてくださいました。例えば、参加してくださった方のお1人がアーミッシュのわさびチーズをもってきてくださり、そのチーズはとってもおいしかったのですが、ちやさんは特定のお酒を飲み終わるまでそのチーズをいただくのを待つことを提案してくださいました。
The first food was sumiso-ae ( vegetables and seaweed dressed with vinegar miso paste) formed with cercle.  In the inside of the round cucumber wall, there were asparagus, celery, red bell pepper, wakame seaweed, and mustard greens.  
最初のお料理は、セルクル仕立ての酢味噌和えです。キュウリのわっかの中はアスパラガス、セロリ、赤ピーマン、ワカメ、そしてからし菜が入っています。
I picked up the mustard green leaves in the farmers market in Union Square.  Mustard greens are rich in vitamin C and beta-carotene.  
からし菜の葉っぱはユニオンスクエアのファーマーズマーケットで選びました。からし菜は、ビタミンCとベータカロテンが豊富です。
This is my regular dish when I have sake or shochu.  This is peanut miso with shishito peppers.  Shishito peppers are rich in vitamin C.
こちらは私が日本酒か焼酎を飲む時の定番。シシトウ入りピーナッツ味噌です。 シシトウは、ビタミンCを豊富に含んでいます。
This is also my regular when I have sake or shochu; This is blue fish tartare.  Chopped scallion, ginger, and myoga as well as miso are mixed with chopped blue fish.  Blue fish is rich in omega-3 fatty acid, and miso is rich in iron.  I sprinkled shiso no mi (fruit of perilla) on the top of the tartare. Shiso is rich in vitamin A.
こちらも、私が日本酒か焼酎を飲む時の定番、鯵のなめろうです。刻んだスキャリオン、生姜、茗荷と味噌を刻んだ鯵に混ぜてあります。鯵はオメガ3脂肪酸、味噌は鉄が豊富です。参加してくださった方からいただいた紫蘇の実を上に散らしました。紫蘇はビタミンAを豊富に含んでいます。
This is myoga and shiso wrapped around with thinly sliced pork.  After I cooked and placed them on the dish, I sprinkled matcha salt.  Adding the matcha salt was really great idea for both the taste and the look!  I got the matcha salt as a gift when I visited Japan this spring.  I truly appreciate it!
こちらは、茗荷と紫蘇の豚肉巻き焼きです。調理してお皿の上にのせた後、抹茶塩をかけました。抹茶塩を加えたのは、味の上でも見た目においても大正解でした、この抹茶塩は春に日本に行った時にギフトでいただいたものです。有難いです!
This is yamaimo (Japanese mountain yam) dressed with kimchi and bonito shuto (Japanese anchovy).  Fermented food such as kimchi and shuto is very healthy and also the chili peppers contained in kimchi is very high in vitamin A.
これは山芋のキムチ&カツオ酒盗和えです。キムチや酒盗のような発酵食品はとても健康的ですし、キムチに含まれている唐辛子はビタミンAを豊富に含んでいます。
This is scallops and karasumi (dried mullet roe) carpaccio,  Sea scallops contain various nutritional elements including protein, selenium, zinc, iron, omega-3 fatty acids, and potassium which are all beneficial for skin and have low calories.  I grated karasumi on the scallops after I added sauce of soy sauce, olive oil, balsamic vinegar, and black pepper.  Shiso leaves are placed under the scallops.  
これは、ホタテとカラスミのカルパッチョです。ホタテはたんぱく質、セレン、亜鉛、オメガ3脂肪酸、カリウムといった肌によいさまざまな栄養素を含んでいて、カロリーは低いです。醤油、オリーブオイル、バルサミコビネガー、胡椒を合わせたソースをかけたあと、ホタテの上にカラスミをおろしました。ホタテの下には、紫蘇の葉をおいてあります。
This is gizzard and konnyaku which is made from konjac, a kind of Japanese yam cooked with ginger, soy sauce, organic sugar, and sake.  I used generous amount of ginger for this.  Gizzard contains relatively good amount of iron.  Konnyaku is almost zero calorie food.  
砂肝とこんにゃくの生姜醤油煮です。生姜をたっぷり使いました。砂肝は鉄を比較的含んでいます。こんにゃくはほとんどカロリーを含まない食品ですね。
I added anchovy into this potato salad.  In addition to potato and anchovy, I added cucumber, and hard boiled eggs.
このポテトサラダにはアンチョビを加えました。ポテトとアンチョビ以外は、キュウリと茹で卵が入っています。
The dinner was ended with rice with beef and burdock.  I added generous amount of ginger as well.  Beef is rich in zinc, and burdock is high in soluble dietary fiber.  
締めは、牛肉とゴボウの炊き込みご飯です。ここでも生姜をたっぷり使いました。牛肉は亜鉛が豊富で、ゴボウは水溶性食物繊維が豊富です。
Now, I feel I might have made too much.  Especially, two different kinds of potato dishes and rice might have been too much.  I will take a better consideration for the next time!  Anyway, everyone ate and drank very well, and had a great time.  Thank you very much for those who participated for this!
今思うと、ちょっと作り過ぎたかもしれません。特に、2種類のお芋の料理とご飯はちょっと多かったかと思います。次回は、もうちょっとよく考えてみます!でも、皆さんよく食べ、よく飲み、楽しいひと時を過ごされました。参加してくださった皆様、ありがとうございました!
